食の授業 〜Dietary education〜

新渡戸高校にて食の授業をやらせて頂きました。

コロナ禍で僕たち飲食店は営業する事を非難され、たくさんのお店が閉店してしまい暗いニュースばかりでした。

はたして今の若い子達が将来レストランや飲食業をやりたいと思うでしょうか? 

食は人を幸せにする力を持っていると僕は信じています。

子供達に飲食業がやりがいのある素晴らしい職業だという事を伝え、飲食店の未来に繋げていけたらと思います。

今回は食のサステナブルとジビエについて授業をしました。実習では一緒にジビエのハンバーグと猪フィナンシェを作りました。

高校生のグイグイの攻める姿勢に感銘を受けました。何よりも一緒に作って美味しかったと言って貰えた事が本当に嬉しかったです。

I recently had an opportunity to talk about food and restaurants at Nitobe High School.

 In the era of COVID-19, restaurants are often a target of criticism. Many restaurants had to close, and good news has been scarce, if there has been any good news at all.

 However, I still believe food has the power to make people happy.  

 I wanted high school students to be more interested in restaurants. I wanted them to know how rewarding it is to work at restaurants. But to be honest, I wondered if they actually would.

 In class I talked about the sustainability of food and game meat, which is my speciality. We even made game-meat Hamburg steaks and financier cake together.  

 I was very pleasantly surprised! It was pure joy to see the high school students so intrigued by food and restaurants. And, most importantly, they loved the taste of the food they made themselves.

 The youth are definitely the future of the restaurant industry!
