鰹のグリエ

地球の温暖化で日本近海の海水温が高くなり脂が乗っているものが沢山が漁れるようになった。嬉しいけどなんだか複雑な気持ち。。。

料理は千葉勝浦の鰹のグリエに夏野菜と香草を入れた山形ダシにトマトとローズマリーウォーターをかけてサッパリと。

“Katsuo”

Katsuo is a fish also known as skipjack tuna. Due to global warming, they’re very common in the seas around Japan. Though it’s nice that we can source fish from nearby seas, it’s hard not to be worried by the global temperature trends.

Grilled bonito from Katsuura, Chiba. Yamagata dashi containing summer vegetables and herbs is sprinkled with tomato and rosemary water for a refreshing taste.
