蕗の薹と文旦、シャリュトリューズのデザート。
蕗の薹と文旦を合わせるデザートは僕の大好きな組み合わせ。
飴で霜柱、メレンゲで雪を表現し割ると春を告げる蕗の薹が出てくるというストーリー。
蕗の薹の山菜らしいのほろ苦さと柑橘の酸味の奥にあるほのかな苦味が二つの素材を繋げてくれる。
Melting Snow
This spring dessert of mine is made with butterbur, pomelo and Chartreuse, a French herbal liqueur. Butterbur is a wild mountain vegetable with a slightly bitter taste, and Pomelo is similarly acerbic.
I enjoy combining butterbur and pomelo for desserts around this time of the year. The dessert contains candy resembling frost crystals and meringue that looks like snow. When you crack them open, you’ll find the butterbur, which in Japan heralds the arrival of Spring.
