ミシュラン東京2021にてグリーンスター&1つ星を頂きました
ラチュレの活動が評価された事は凄く嬉しかったです。ラチュレに携わってくれた皆様に感謝しております。
ミシュランがこのような賞を新設した事により、日本の料理人が”美味しい料理”だけでなく”食の未来”について考えるようになってくれたら嬉しいです。
これからもジビエ料理の普及させる事により森林の活性化を目指す事。
乱獲している魚介類を使わずに未利用魚などを積極的に使う事。
自家菜園の野菜を使い規格外の野菜を出さないようにする事。
未来を担う子供達と料理を作り食の問題を知ってもらう活動を行う。
これらは自分の使命だと思っています。
これからも日々精進してまいります！！
We’ve awarded a Green Star of Michelin Tokyo 2021 based on our activities. Thank you so much for all of your great support. We hope this new award leads every cook to think about the future of food as well as the taste of dish.
Here are some missions for us;
popularizing game meat to re-energize woods
trying to embrace not overfished ones but unused fish, and vegetables from our farm not to waste irregular ones
cooking together with children to let them know about the food problem.
We promise you to keep working on them day in and out!
